AMERICAN GOULASH

1 lb ground beef or vegan burger 1 1/2 -2 cups elbow macaroni - depending on how much liquid you want in goulash 1 1/2 tsp onion powder 1 1/2 tsp garlic powder 1 tsp spanish paprika 1/2 tsp Italian seasoning 1 bay leaf one can diced tomatoes 2 small cans (8 ounce) tomato sauce -or one large can 2 cups chicken broth - or water with bouillon 1/2 cup or more shredded sharp cheddar cheese - I used Tillamook extra sharp cheddar cilantro or Italian parsley - I used cilantro to garnish with

*for heat you can add cayenne, Hungarian paprika, red chili flakes, tougarashi seasoning (what I used)

Cook meat or vegan product, drain meat if necessary, add spices then tomatoes and tomato sauce along with broth. Simmer for 30 minutes to let flavors develop. Adjust seasonings to your taste Bring back to boil- add macaroni and cook until al dente or just under. DO NOT OVERCOOK NOODLES, they will continue to cook a little in the broth. When noodles are finished cooking, add in cheddar and combine. Serve and top with chopped cilantro or Italian parsley- you can use dried parsley if that is all you have but I do recommend the fresh herbs if possible.

* I served mine with garlic bread.
